Domesticity is Bliss

I made a super supper! I was apparently cooking so enthusiastically and *creatively* that JR decided the best course of action would be to stay out of the kitchen. Clearly, he couldn’t stand the heat. (But he is Tougher Than the Rest-Chris LeDoux)

I had to tell him today that I do realize there are times when the outlook is bleak, but that’s when I blink. There is a future for me, somehow. I’m really enjoying thinking about where to put what furniture, artwork to hang, and that sort of thing… Domesticity is bliss. Or something like that. Oh, we’ve been together 3 months today 🙂 Love you baby!

[Edited to add: This is my first recipe and I didn’t really do it all organized, read the whole shebang first. And feel free to add onions and fresh cilantro!]

 

Super Chicken Supper

Feeds 2-3. Or a workin’ man and my little pouch dinner and second dinner)

Really should have photo’d dinner, but here goes, the best I can recall:

2 Chicken Breasts cubed
coconut oil
Rotel Original
Can of corn (Drained)
Can of black beans (rinsed)
2 Tbs minced garlic
salt and peppa
1/2 bottle dried basil. Scoop most out.
2 tsp dried basil
1 tsp ginger
3 cups mashed potatoes. I’m not gonna tell you how to make ’em.
Sour Cream (or Tofutti)
Grated Parmesan

OK, melt the oil and add garlic, basil, ginger, chicken. Cook stir and all that til the chicken is done. (add salt and peppa at some point in here). Meanwhile drain the corn and rinse the beans. Add those and Rotel to pan. Big skillet kind of pan, by the way. OK let that heat through, and finish up the bashed taddies.

I even plated it–but forgot a pic!

Pile mashed potatoes in the center of the plate, and ladle chicken stuff over it. Top that with a sprinkle (or more!) of Parmesan and a dollop (or more!) of sour creamy goodness. Et voila!

Serve immediately-or take a bite then serve the rest of the crew.
